Light summer salad from one of our favorite chefs 'Sergi', the chef of the newly opened Caviar and Bull restaurant. A real Mediterranean cure for the hot days, enjoy!




Ingredients for the fake tomato:

  • 200gr fresh tomato.
  • 200gr tomato juice.
  • 4gr kappa
  • 1 mozzarella

Ingrdients for the salad:

  • 65gr salad
  • 5gr balsamic caviar
  • 10gr vinaigrette
  • 20gr cherry tomato (4 halfs)
  • 5gr fresh basil
  • 10gr crushed pistacio

Ingredients for the vinaigrette:

  • 1L olive oil
  • 100gr whole grain mustard
  • 300gr fresh orange juice
  • 5gr salt
  • 5gr pepper
  • 200gr white wine vinegar
  • 4 orange skin

For the fake tomato mozzarella:

Blend the tomato juice and fresh tomato and pass it for the THIN strainer. Add salt, pepper and olive oil.
Add the Kappa in cold and take it to boil in a small pot. When is around 70 degrees after boil bath the mozzarella in the mixer 2 times and will be covered with the tomato consomme.

For the vinaigrette:

Mix all the ingredients together and blend it.
